Sunday Soup Night

This is the recipe for my easy Rotel soup. I usually just add ingredients until it looks good. Sometimes I add mushrooms or a can of sliced carrots. The Rotel gives it a little bit of a warm bite. I hope you like it as much as we do!

Rotel Soup

2 cans of beef broth

1 can of Rotel

2 cans of diced tomatoes

1 can of shoepeg white corn

1 can of black beans or black-eyed peas - rinsed

1 cup of Rotini noodles – uncooked

1 pound of hamburger meat, browned and rinsed in hot water

Salt and Pepper to taste.

Cook covered on low heat until the noodles are done – about 20-30 minutes . I usually double this recipe and freeze leftovers. This is good with cheese and crackers, grilled cheese sandwiches or cornbread. Great for a quick supper or lazy crock pot days.

Mmm...sounds like just our thing! I'll have to file this in my recipes and try it soon.

ok, so I'm so making your soup..it sounds so yummy...I love rotel :) And, yes, I never care about my hair until I take a pic with the sisters and realize I'm the only one that hasn't brushed her hair all day, lol :) Maybe some day I'll go back to caring what I look like...it just doesn't seem to bother me these days...:) Thanks for stopping in and for the great recipe, kj
