Sunday Soup Night

This is the recipe for my easy Rotel soup. I usually just add ingredients until it looks good. Sometimes I add mushrooms or a can of sliced carrots. The Rotel gives it a little bit of a warm bite. I hope you like it as much as we do!

Rotel Soup

2 cans of beef broth

1 can of Rotel

2 cans of diced tomatoes

1 can of shoepeg white corn

1 can of black beans or black-eyed peas - rinsed

1 cup of Rotini noodles – uncooked

1 pound of hamburger meat, browned and rinsed in hot water

Salt and Pepper to taste.

Cook covered on low heat until the noodles are done – about 20-30 minutes . I usually double this recipe and freeze leftovers. This is good with cheese and crackers, grilled cheese sandwiches or cornbread. Great for a quick supper or lazy crock pot days.

ok, so I'm so making your sounds so yummy...I love rotel :) And, yes, I never care about my hair until I take a pic with the sisters and realize I'm the only one that hasn't brushed her hair all day, lol :) Maybe some day I'll go back to caring what I look just doesn't seem to bother me these days...:) Thanks for stopping in and for the great recipe, kj
